Bourbons (Red, Pink, Orange, Sidra, Ají, Rayado)
Descendant of Typica, renowned for its complex sweetness, bright acidity, and good body; mutations such as Sidra or Ají reveal unique fruity profiles, offering aromatic and flavor notes that can range from floral and fruity to hints of chocolate, caramel, and honey.

Castillo State
Colombian pride, resistant to coffee leaf rust, it combines productivity with balanced and versatile notes, featuring a smooth profile, good body, and a balanced, citrusy acidity, with fruity, citrus, and sweet notes such as panela or mandarin. In some cases, it is also described with hints of chocolate and dried fruits.

Caturra Chiroso
Originating from Antioquia, it stands out with intense florals and cup complexity, surpassing Geisha or Ethiopian varieties. Some of its profiles are floral and fruity with sweet touches such as peach, mandarin, honey, jasmine, and panela, along with citrus notes and a clean, sweet finish. Its body is silky, combining richness with exotic notes.

Java
Introduced from Ethiopia to Indonesia in the 19th century, it is recognized for its silky body and spicy nuances. Due to its origin, its notes are often complex, with earthy, fruity, and floral undertones, and a medium body with balanced acidity and a smooth finish. The variety of flavors may include chocolate, nuts, vanilla, citrus, and spices.

Hombligon
It is an Arabica coffee grown in Colombia, distinguished by a small “navel” or bump on the cherry. This variety is gaining interest in the coffee market, both for its strong productive potential and disease resistance, as well as for its intriguing flavor profiles, which may include notes of red fruits, chocolate, and citrus, with a silky and creamy body.

Sudan-Rume
A rare and high-quality Arabica coffee variety, originally from Sudan and known for its resistance to diseases, its complex and floral aromatic profile, this coffee stands out for its exotic notes of orange, cherry, honeysuckle, currant, cocoa, and nutmeg, with a pear finish.

SL-28
It is one of the most recognized for its exceptional cup quality. Originating from Kenya, it produces large beans and offers a complex sensory profile, with bright acidity, medium to high body, and notes reminiscent of citrus fruits, red berries, and floral undertones.
